Hmmm... what's the difference between a Bison and a Buffalo? ;) :p

Technically, the only animals which should be called buffalo are the African buffalo (Syncerus caffer) and the water buffalo (Bubalus bubalis) of Asia. The American bison (Bison bison) is sometimes referred to as the American buffalo because of its resemblance to the buffaloes of Africa and Asia, but it is not closely related to them, and should more properly be known as a bison. There is also another bison species, the European bison (Bison bonasus), which is sometimes called the wisent. All these animals belong to the same family, Bovidae, but are distinct species.

Also, you can't wash yer 'ands in a buffalo... :D

Ah! sorry my mistake, whats the main differences?

From wikipedia (Wisent is another name for European Bison.)
[h=2]Differences from American bison[/h]Although superficially similar, there are a number of physical and behavioral differences between the wisent and the American bison. The Wisent has 14 pairs of ribs, while the American Bison has 15.[SUP][10][/SUP][SUP][dubious – discuss][/SUP] Adult wisents are taller than American bison, and have longer legs.[SUP][11][/SUP]Wisents tend to browse more, and graze less than their American cousins, due to their necks being set differently. Compared to the American bison, the nose of the wisent is set further forward than the forehead when the neck is in a neutral position. The body of the wisent is less hairy, though its tail is hairier than that of the American species. The horns of the wisent point forward through the plane of their faces, making them more adept at fighting through the interlocking of horns in the same manner as domestic cattle, unlike the American bison, which favours charging.[SUP][12][/SUP] European bison are less tameable than their American cousins, and breed with domestic cattle less readily.[SUP][13][/SUP]

From wikipedia (Wisent is another name for European Bison.)

It appears from that Wiki description (regarding the grazing vs browsing) the European bison is more similar to the Eastern bison (North American bison) than the Western one. There were indeed two species here (or at least two sub-species) originally. The western species/sub-species grazed more due to its habitat (the Great Plains) rather than browsing in a woodland habitat such as was found in the East. Efforts are being made to re-introduce them in the East here as well but I haven't seen anything about it in years now.

They are farmed here as well and they taste like lean beef. As mentioned earlier they can also be hybridized with domestic cattle (beefalo) Now beefalo meat has to be marketed (legally) as bison or buffalo but you can tell the difference; the hybrid meat is much, much more difficult to distinguish from ordinary beef. Cattle farmers dislike bison herds because they carry Brucilosis (which the bison are resistant to) which can devastate domestic cattle.
