birch sap recipe

hi guys
just come back from an after-school outing to collect birch sap taps a put out yesterday, whent to collect yesterday evening, and today at luch and again this evening, they were overflowing again, i now have approaching 6 litres of sap thats beng kept in the freezer.

what should i do with it, wine, beer, syrup, has any one tried more that one of these and which would you recommend?
btw the taps are still out there, just on a different set of trees.

come on please which one tastes better (beer vs wine) ive given u on syrup as i need to boil down to 100th of the volume

drinking it neat is kinda like drinking distilled water I think.....I say ice cubes and vodka/whiskey....faster and less fuss

so make birch cubes and add to whiskey??

Try it every year and can't see what all the fuss is about.
For me it's just a useful drink when out and about

Inclined to agree its not the best tasting but handy to know.
