AVE does sort of tool teardowns, not very PC but I like the guy.
Essential Craftsman has a wealth of knowledge from the building industry and a chilled out way of presenting.
Curious Droid, mostly space science stuff.
Matt Rissinger, building science stuff.
Clickspring, clockmaking and machining.
This Old Tony, machining with quite a lot of humour thrown in as well.
Cinifix movie reviews.

I came across black country Woodsman the other week.
He hasn't got a lot of videos on YouTube yet but the production is fantastic and so is his attitude.
You can just see how happy he is to be out in any kind of weather or for any length of time.
There is always a brew on some kind of stove or with a real fire and very often a bit of grub too.

Well worth a watch in my opinion

Vinnie’s day off has excellent content with no bs and he champions the use of the humble folding knife. A very honest chap with none of the “here’s one I made earlier”

These guys are the real deal. Not 'how to use a firesteel, and look what expensive tosh I just blew some cash on review videos!
And along similar lines:

Not all Bushcraft and some already mentioned.
AVE, He takes things to bits and describes how they were made.
Primitive Technology, just really well done and shows you don't always need words to get a concept across.
Clickspring, he makes clocks in the home workshop, well filmed and a chilled delivery.
This Old Tony, another home workshop one but he's genuinely funny.
Wranglerstar? Used to like it but its a bit clickbaitey and he's often being a right drama queen of late and I can't watch it.
The Fully Charged Show, mostly about the viability of renewable energy and electric cars.
Theres more but I can't remember them offhand.
