Somewhere there's another recent thread on this, but basically it depends on your acorns. The ones I gather near me I can eat pretty much as is, so I don't bother leaching them, but if yours are very bitter they are better leached since they can harm you if there's too much tannin.

Wow grate link :You_Rock_ . I've been thinking about trying to make some acorn meal recently, there seems to be lodes this year, has anyone baked with it, what does it taste like? I'll definitely have a go with it, see what difference it makes in my bread.

A couple of years ago I picked and processed 70lbs of acorns. Still using stuff deep frozen (both wet mush and dry flour). I've got pictures of a few things I've done with them. An acorn & polenta pan bread is good (providing you add some extra flavouring... like tomatoes).
