I've been collecting knives with handles made from species local to my area. For example, my most recent knife is handled with California Buckeye Burl. This "connects" the knives to the forests I roam most often. And I think it's kinda cool. :)

My thought is that fats don't dehydrate well. I would bet that the oil goes rancid.
I avoid dehydrating anything fatty, so I don't have a lot of experience with this. We'll see what others have to say.
