IMHO they're a waste of space on virtually any knife. Leave the ricasso really small so that the edge comes back very close to the handle and there's no need to 'choke up' on the knife in use. The only reason I can ever see for 'choking up' is in order to apply more pressure on the workpiece...

If the knife is properly heat treated, a file shouldn't cut it well enough to be an effective tool for the job. This is best done with a either a belt grinder, running slowly, and done with care not to overheat the blade (and spoil the temper), or laboriously with something like stones or...
If you want something that you can tote easily in the field, you might like to consider a Double Sided DMT Diafold ;) With a choice of grits, and weighing in at less than 2 ounces you can easily maintain a knife edge and an axe with one of them to a perfectly good standard.
It sounds as if you might be letting the hone 'wander' while you're using it. You need to keep the hone pressed flat on the bevel of the knife (if it's a Scandi grind) at all times.
If you've now made the bevels uneven, you'll need to put some work in to flatten them again, or have the knife...

Things to watch out for with the mousemat method are the firmness of the mat and your 'angle of attack'. If the mat is too soft, or you push down on it too hard you're in danger of rounding the edge off the knife rather than sharpening it. This is made worse still if you hold the knife at too...
