Not vegan, but traditional way to add bags of flavour to pizza is anchovies. Depends if you eat fish or no flesh at all I guess.
One vegan flavour bomb is shiitake mushrooms poached in soy. They have a pretty meaty texture anyway & the soy adds umami.
I find it quite bizarre that vegans would want an option to eat black pudding, given the inevitable comparison with the almost entirely animal ingredients of the real thing.
It's also patently ridiculous to describe the vegan version as "black pudding" , given that it has so little in common...

A friend gave me a great T-shirt when I turned 40. It said “If you haven’t grown up by the age of 40 you don’t have to!”

You should be able to lay hands on some alder without too much effort. It grows like a weed and is nice & easy to carve.
Try a post on your local sell and seek sites or ask a tree surgeon. Sharp knives are the key to not cutting yourself.
