After a lot of thought, I decided to make a change.
I pulled the trigger on a Casstrom Woodsman in Sleipner Steel.
I haven't used any High Carbon Steel since the 1095 days.

Nice. I keep looking at the Jarv versions, preferring the thinner stock. No denying the Casstrom is one of the nicest looking bushcraft knives.
 
Do you think you would notice a 1mm difference? I'm just curious and learning...

Absolutely. I tend towards 3mm blades for that kind of blade length. 4mm on a scandi reduces versatility for me, it puts the knife much more firmly in the woodworking category and is less efficient at finer work and food prep.

It's a bit less than a mm, the Jarv is 3.2mm (quite a sweet spot IMO). Your Sleipner steel should work well for you though. Did you get the bog oak handle?

No, Olive Wood. It's kind of a test. What do you think of the steel used in the Jarv?
