I have a nice brace of woodcock - not something I've ever cooked before. I know some people treat them like snipe and roast them whole, entrails and all, but I really don't fancy that.


Any culinary suggestions?

I would def roast them whole, excluding the guts if you wish, as there so small and fiddly to do anything else with, have them on toast with an egg. Yum! If you really wanted to you could take the breasts off both birds, butterfly them and lightly pan fry them and then have them on toast etc.
