The samphire seems to be at its best about now. I have in the past just boiled it for a few mins or used it as a stuffing in fish . Are there any better ways of cooking with it ? Ilan

hi yes i do tend to have a nibble when collecting it also collect sea pursane as well from the area both are ok raw but they do tend to be a little salty ilan

The one which was available in the creeks around the Moot was the Marsh Samphire, and not the true Samphire which is a more coastal plant. Marsh Samphire was found in the vicinity of the Moot and is best steamed or dropped into boiling water for a few minutes and then served. I would suggest that ALL edible aquatic vegetation is thoroughly washed and cooked before ingestion. Too many bugs and unknown deposits floating around out there. :)
