Stuffing for duck

Got my xmas bird (I cater every year, I like to control whats going on) a good duck from the market

(no real use for turkeys...untill they are half price, that is)

(and I wont mention that year I made a TURDUCKEN....you only live once)

I like to make my own stuffings (its one area in which home made really is best)

what stuffing would you make for a duck?

The classic duck recipes use sharp acidic fruits to complement the fattiness of the bird (orange, cherry, plum, etc.). I've been using dried cranberries in quite a lot of my cooking in recent times. I've put them in mixed fruit pies, chutneys, game casseroles, etc. Might be an idea there for you, possibly?
BTW, I buy quite a lot of spice, nut, seed and dried fruit ingredients from Julian Graves. Their stuff seems pretty good value and there are branches in many larger towns.

Thats a good idea

I make sage and onion

1 egg
1 slice bread
half small onion
sage to taste

mince finely and mix, this lot will do one chicken.

a modified recipe with less sage and some exotic dried fruit added....possibly nuts.

This might be a new deployment for my mincemeat too.

Something you can do with your stuffing is put one tin baked beans (or similar product) in ovenproof dish; cover with stuffing and bake half an hour.

This is a very good and cheap meal
