This has come from a recently felled tree behind my house. Doesn't look as viscous as resin, and the smell (whilst pine-like) is not as potent. What is it and what uses does it have?

It may be useful to know that this was where two branches derived, and there is bark in this area squashed in.

Looks like pine resin,

Bleeding like that is quite common on wounds, it changes colour as the resin ages.

If it was frass from insects you would normally see marks or holes in the bark, lifting the bark you would see damage if it is diesease or insect damage

frass from Beetles such as D.micans it would have pinky red tint to it.

But without seeing it in flesh cant be certain
