alright looks good. Stumbled upon a long sort of sharpener my granddad used when he had his restaurant. It has a sort of knife handle but a long rough metal stick. I know its a sharpener but would it work with a high carbon blade?

yep would work fine, i just use a little dimond sharpening pad, only cost about £2 for 2.....

Pretty well. It's to polish the cutting edge to give it the final sharpening and remove any burrs (wire edges created by sharpening). You can also use:

Newspaper (i've done this once, successfully)

Card - the sort of packaging that breakfast cereals come in, with some metal polish or similar smeared on it

Wood - as per card.
