Freshwater Crabs

Hi Guys just mending and making some new fishtraps, caught alot of crabs last year but never cooked or ate them as they were very small anyone got any info?

in my old trap i modded her so there was a small hole in the side so small ones (too small to eat) could get out and the bigg ones (edible) stayed in
