Just thought id share a couple of pics of some Cowslips we saw yesterday whilst out on a Family afternoon bimble, ive not seen Cowslips in such abundance around here for years.
Absolutely masses of them where I am, and saw masses more on the A470 near Merthyr Tydfil yesterday. They do seem to be increasing somewhat, especially on road verges.
"Cowslip leaves have been traditionally used in Spanish cooking as a salad green. Uses inEnglish cookery includes using the flowers to flavour country wine and vinegars; sugared to be a sweet or eaten as part of a composed salad while the juice of the cowslip is used to prepare tansy for frying."
