Never had a problem with olive oil yet but as below I use light coats and build them up.
One tip I was given ages ago is to pop your spoon, kuksa etc... In the over on about 180 for a few mins or until it's almost too hot to hold then apply your oil.
Apparently the heat helps the oil penetrate, not sure if this is really true but the results always seem to be good.
