Acer tree safe?

We moved into a house that is over 300 years old 6 months ago, we got the inside mostly sorted, but now that spring is here its time to do the garden. The previous owner started to cut down a couple of trees that were left to become an eyesore.
The last is a Japanese Acer is the wood safe to use for carving?.

Just about all woods are safe to carve but I take it you mean is it food safe.

The answer to that is yes because as Drliamski said it belongs to the maple family :)
