This is an excelent two part video about the cleaning, portioning and cooking of rabbits. The production values are very good and the hunter's narration over the video's soundtrack helps the presentation a great deal.
Part 1, http://www.youtube.com/user/HuntersVermin#p/u/9/a4DYOeRn9tY
Part 2, http://www.youtube.com/user/HuntersVermin#p/u/8/T-sK2PHO2OI
The other videos by the presenter are just him shooting crows, magpies and rabbits etc. and they get a bit monotonous after a while.
Happy trails...torc.

I iamgine he'd be a lot faster if he wasn't instructing.
I prefer to chop the legs, skin it, pull the skin over the head and chop the head and then gut it, but that's neither here nor there. More than one way to skin a cat (or rabbit) so to speak.

Looks like he highlighted checking the eyes and organs and fair play for the vinegar, salt & water soak to soften it up a bit and get rid of that rabbity smell. The amount of people that never do that is unreal.

Don't know if he mentioned it, but I think the sex and age of the rabbit makes a difference to the quality of meat.
Old bucks go straight to the ferrets.
A 3/4 size rabbit or a milky doe being best.

Very interesting. None of my immediate family or friends hunt so I've never been exposed to this. Surprised how large the liver is! Id' love to try that myself, bet fresh rabbit tastes lovely.
