A teaspoon of cocoa is always a good thing in a chilli sauce. I like smoky Ancho chillies in it too to add another layer that isn’t just heat.
But the real keys to success are good quality ingredients and taking a couple of hours to simmer it down and make the sauce thick and concentrated.

I have an aged TNF Blue Kazoo in the Long version which has always kept me warm down to small sub-zeros. I’m 6’4 & less of a racing snake these days. More like a basking shark!
It packs down pretty small too.
I’ve just got one after reading this post. Must be 40+ years since I last had one & I had forgotten how much fun they are for plinking. Just using the biodegradable clay ammo which seems fine.
