A teaspoon of cocoa is always a good thing in a chilli sauce. I like smoky Ancho chillies in it too to add another layer that isn’t just heat. But the real keys to success are good quality ingredients and taking a couple of hours to simmer it down and make the sauce thick and concentrated. Like...
