    Kitchen Knives

We keep a tiny 3" Rapala fillet knife. Fiona dresses out 50+ birds with it every October / November. Never found a better B&T knife

    Kitchen Knives

Mine aren't but if I started again, they probably would be. They are excellent value.

    Eggs - Recipes and Preservation

Done well it works very well for backpacking. It reconstitutes nicely for scramble or omelettes. It also is a good standby when the hens are moulting.

    Eggs - Recipes and Preservation

This shows a number of ways to preserve eggs - they all work fairly well. We also did an exhaustive test on freezing in different ways if you are interested

    Bone Broth

Oh I'm greedy - but say two thighs will produce two portions of chicken larger than a takeaway main course from really high quality, high welfare meat. Throw in egg fried rice using our eggs & veg cooked in our stock but using first rate Jasmine rice (30p a large portion). Add in some cornflour...

    Bone Broth

We do the following when jointing birds. When dressed out our birds are 1500 - 2000g. Breast on a utility bird is about 350g. That's a meal for two. Thighs are about the same amount (say 300g). There are then two drumsticks & two wings. We generally batch these up for hot wings or chicken legs...

Amen to that Paul was enough of a difference to make a difference

    Bone Broth

Anyone who processes their own meat often has a glut. I end up with a huge amount of bone even from one Roe. Always happy to pass on bones (have even saved large ones for dogs)

    Bone Broth

This is the rice technique that we use. There are plenty of good books - you won't go wrong with Mrs Beeton, but good YouTube videos (Townsends springs to mind) are more inspiring. Happy to share more

    Bone Broth

Honestly Mark there are so many things. Possibly the very finest is French onion soup with the onions sweated for at least 6 hours in stock until they slowly caramalise. Even the best restaurants don't do it because it takes a day. That said the Esse hasn't gone out this year so leaving a pan...

    Bone Broth

We produce vast amounts of bone based stock (we raise, slaughter & butcher livestock). Chicken is a great place to start. A roast chicken leaves a carcass. Bag it & freeze it. When you have 3 or 4, make stock. You really want a pan in the 20 litre range. There are many amazing ways to use it...

    Money

Personally I think he has been a disaster on housing, the economy & civil liberties. However this is now well into politics so I will leave it there.

    Money

That's a very generous interpretation. The Guardian (hardly a hot bed of right wing opinion) is rather more condemnatory about the economy, the housing crisis, the gift scandals, the payments to his family by charities etc...

    Sweet Dessert Mead

I really like this recipe Andy. It isn't overly sweet but retains enough unfermented sugars to have a honey flavour.

    Smart Phones

For me smartphones are a revelation, a veritable gift. We both have good ones. I can tap the screen and have Merlin identify that I am listening to a Raven, Skylark & Curlew simultaneously. I can split logs whilst listening to John Lewis-Stempel's "The Wood" I can then sit on a log & "talk"...

    Money

There are better choices than Jackery Chris. DM me when you want to buy & I'll go over the options for you (I can usually sort you out some discounts too depending on make)

    Money

Certainly that can be an issue but we managed. With serious injuries & long term illness most employers will pay you off too! We had plenty of food & firewood so it set us back a bit but was quite manageable. Fiona took over indoor jobs like administration of our shop & editing YouTube videos.
