That weekend just gone saw me grinding a few kitchen/chef's knife blades.
All 2mm stock SF100.
I always find that when grinding large, flat surfaces the job is made easier by grinding an initial, hollow bevel.

I got the WIP photos for the other forum, so shared a few here. The grinding was a steady plod, really, took about an hour I suspect, which is a long time to grind that blade, with the handle being in place though I didn't want to put any heat at all through the blade/tang.

The smaller 'wheel' you see there is the cutting wheel, the larger is a steel disc that the spine of the blade can rest against.
I fit spacers between the steel wheel and cutting wheel to govern the distance from the spine of the blade to where the groove is...

I keep SF100 in 5mm, SF100 and AEB-L are all but identical. I prefer the Silver Fox as it was made in Sheffield :)

Anything really, most grades are available in small quantities these days. What might you like, what do you want to do with the knife?
Today saw two 13" blade length 'Bowies' finally ready for handles, mirror polished (4" steak/parer for scale) and coming in at over 10" less in the blade, a small hunter utilising UK-made stainless pattern-welded steel.
This is a bonded block.
As @TLM rightly says, there is zero doubt in my mind that the base material would delaminate before the joint.
It might also be worth making clear that none of that will happen very easily at all, that block might last forever :)
