Only those things that work. Pared down over however many thousand years. I think, like the Icemans kit, it gives an interesting insight into what it took to survive in the stoneage, kit wise at least. Everything they own is kit seemingly.

The iceman had a sensible kit.

I always get the impression of gear freaks from Inuit gear

Especialy as the Dorset Island culture lived perfectly well without such new fangled tech.

The earlery cultures may have had a more abuntant and readly avalible food source so did'nt need complicated technology. The inuit did'nt have too much surplus to their requirement.
