It's considered bad luck to call the salmon by name, so it's often referred to as the redfish.
I wondered why you were talking about salmon !

Redfish could well be no more than a local name for a very prized catch.
Need to teach that guy how to case that fish in clay and cook it in a good bed of coals.

Sure as hello not one of our Salmonidae. Not a fan of salmon, over rated (after 60 years of eating them.)
I really like fish and shellfish to eat. Best in the Pacific has to be halibut.

Here, some Americanos call Red Snapper 'redfish' but in Florida they call one species of Drum 'redfish'.

That is no snapper. I catch the all the time. Like the Black Snapper best.

Nope. There are lots of good ways to cook Redfish: 1) Fried, 2) On the half shell (on a charcoal/wood grill with the scale side down) 3) A la Veracruzano. BUT!!! The very best way (and the most traditional way) is blackened!

Yep. it's a particular species of Drum and a shallow water fish (called Redfish throughout the upper Gulf of Mexico from Florida through Alabama, Mississippi, and Louisiana, to Texas) and are caught in bays and beach surf.

Red Snapper like this are a deepwater reef species:

No. That photo was also lifted. I'm having trouble finding the ones I posted on Facebook (and here) a few years ago when Barbara, James, and I took an employee Red Snapper fishing trip with Barbara's company. Our limit was 2 fish each and the open fishing season is only less than a week.

Ah!!! They've rematerialized! Here are some of our fish (the 3 of us and the rest of the boat) being cleaned by the boat crew at the pier back in 2013. We had a total of 29 pounds of fillets between me, Barbara, and James. We ate Snapper for months.

The red Snapper? We fried some (dredged in corn meal) wrapped some in foil (covered with butter, seasonings and herbs) and baked them. I've since cooked some A la Veracruzana. The last is my favorite for red Snapper so far.

This one someone caught off of Gavleston, about 200 miles north of where I live (Hurricane Harvey Ground Zero).

Yeah. We get them that big here too; but there's a "slot" limit: must be at least 18 inches to keep---but not over 27 inches.

In Texas they are normally supposed to have a maximum length of a redfish of 28 inches.

However....

During a license year, one red drum over the stated maximum length limit may be retained when affixed with a properly completed Red Drum Tag and one red drum over the stated maximum length limit may be retained when affixed with a properly completed Bonus Red Drum Tag. Any fish retained under authority of a Red Drum Tag or a Bonus Red Drum Tag may be retained in addition to the daily bag and possession limit as stated in this section.

The area here being fish rich had an interesting local effect recently. Hurricane Harvey landed as a Cat 3 and very, very rapidly rose to a Cat 4. In addition to almost 52 inches of rain in about 8 hours, the 120 to 150+mph winds, and the spawned tornadoes, the tidal surge put most of Port Aransas about 6 feet below the surface of the ocean. Mustang Island is basically a glorified sand bar. When the water receeded it left about a zillion fish stranded everywhere. After a while the whole town started smelling like rotting fish. The flies were so bad it was sometimes hard to notice the mosquitoes because of them.
