This is what I did for our yurt, I used a sheet of silicone sewn in as a panel for the pipe to go through. I know that there are double skinned pipe sections out there, and I'm sure someone used a section of fireblanket as a panel.

i use a cowel around the chimney to just make a bit of an air space between the chimney and the fabric of the tent, it's worked well so far. a catering sized tin with the top and bottom cut off and a few screws to hold it in place on your chimney is a quick and easy home-made solution.
