Could do but I'll be running a 50 watt bulb....not sure if a POT could cope?

That's a fair sized bulb. What about a variable voltage power supply then? I.e get 8 1.5v batteries, connect them up and remove them as needed to vary voltage.

not bad but i reckon that you would be better of with a 5W LED or more if they exist and a verbal regulator to power it with a 12V dc 7AH battery

these are the facts for what you are thinking of (i think ?) :

12V dc very ruffly 7AH +++++ power supply /battery (car one?)

50 watt bulb

my forts are :

5W LED or more if they exist

verbal regulator

12V dc 7AH battery
