I did a beech spoon a couple of weeks ago but had a lot of trouble with fibres lifting. It was OK once I'd sanded the heck out of it (yeah, I know) but I couldn't get the finish I was aiming for. My knife was as sharp as I've ever had it, so I don't think that was the problem. I'm feeling a bit more inclined to have another go now,though.
