I'd definitely stay away of any oil that easily goes rancid (meaning olive oil in particular)... The smell can get really bad. Linseed is good, as well as any oil that is used for furniture, finish with bee's wax.

1. Wet leather a little with water.
2. Put a damp tissue or towel on the stains.

I'd get myself a regular benchstone with 400/1000 grid (~20cmx6cmx3cm) and then just put it into the shape I want (saw). Also put a leather strop and some compound in and you're good.
While I have to agree that there probably won't be THE ONE (personal taste alone excludes that), I think there's at least a type of jacket that comes pretty close to meeting every single demand... at least if you combine it with a second layer like a fleece jacket for example...
