Chicken of the woods on a Yew

Quite a few years ago I was in a TV cooking competition and foraged COTW was our starter, just shallow fried in wild garlic butter and then served on a nice focaccia to soak up the juices. I was banned from using it because the judge, Lloyd Grossman, had never eaten it before & his manager had...

Rosemary Infused Groundnut or Sunflower oil

In a former life I had an artisan bakery for 20 years. We made lots of Italian style breads with little 1/2% or so, salt. The only herbs or spices we ever found to retard the yeast were Salt (obviously), black and white pepper, cumin and chilli. With ground chilli I think it could have been the...

Rosemary Infused Groundnut or Sunflower oil

You could dry the rosemary and pulverise it in a blender/grinder. Literally make it into a powder and sift it in with the flour so there is no texture change at all. Might give it a hulk-like green tinge though.............

Rosemary Infused Groundnut or Sunflower oil

There's a big debate amongst sous-vide enthusiasts about whether its safe to include raw garlic at low temperatures in the vac pack with the other ingredients. Consensus seems to be use garlic powder instead. You should be ok at the temperatures for roasting and frying, although using raw garlic...

Rosemary Infused Groundnut or Sunflower oil

If you want the Yorkies to taste of rosemary why not chop some very finely and put it in the batter? Alternatively you could infuse the milk with bruised rosemary using a little heat to speed it up. Then fine strain it and chill until needed for the batter. Probably too obvious and already tried. S

    Using Blackcurrants

I do quite a lot of playing with recipes and suchlike. I did buy (at great cost) some freeze-dried blackcurrants from the company set up by Ferran Adria to make ingredients for his restaurant El Bulli. They were amazing for putting the Blackcurrant flavour into spirits. I made Vodka and Rum with...

    Using Blackcurrants

I was given about 10lbs of blackcurrants a few years ago by a neighbour. Made the usual creme de cassis, pies and then read about making shrub when it was too late as they were all gone! The following year I made a half gallon of Blackcurrant Shrub and it is delicious. Equal parts Blackcurrant...

Just remembered that one of our local street food vendors was making Yorkie Wraps before the Zombie Apocalypse struck. A fairly flat Yorkie wrapped around various fillings. They were very good also very very filling!

The pig is the one animal that's difficult to rail against as it is not only delicious ( for us omnivores of course ) but is so phenomenally useful and has very little waste. It's definitely the one I'd miss most if I had to stop cooking with meat. I've been married to a vegetarian for 35 years...

Originally they were not part of the roast dinner as they are now as I'm sure you know. My Gran used to serve a roasting-tin sized Yorkie before the roast with gravy as a filler to make the meat go further and often after the main course too with jam or syrup as an equally filling dessert. They...

If you're near Cumbria check out Foodsmoking Jo. She's an abyss of knowledge about all things smoked and I think she still runs courses now and then. I went on one a few years ago which included Morecambe Bay Shrimps, Mince Pies, Sangria and Scallops as well as all the usual meats and fishes...

Although for Yorkshire Puddings you really need lard. Although I'm reliably informed that rendered back fat from a roadkill badger works just as well. Not tried it myself though! S
