SGL70 has a big camp. Sure hope they fill all their tags.

Lots ofpeople with Limited Entry (aka lottery) moose licenses in central BC are going to give it away this year.
The fire season was so brutal whether the adult moose and calves could out run it or not.
Hell of a thing to see burnt cattle. Fences. Nowhere to go.

YAHOOOOOOOOO! Got one! What do you eat first? I bring a bag of onions and start the fire.

I have heard guys shoot moose. Bang!. . . . .. Bang! Bang!. . . ..
then the most amazing howling enough to make you laugh.

Enough adrenaline shakes for 6 months! This is wonderful news.
I always like to see hunters do well. Looks like a big cow. Any calf hanging around?

I alway got bison hung for 7+ days at 5C. Fork tender, no knife needed.
We call those big cooler units = cold rooms. At least 3 in the village that I can think of, one is for bison.

A prinskorv it is the opposite of what you might call Bologna, (Falukorv in Swedish or Norwegian)

One is tiny, one is large, but they both fill a hole ( in a hungry stomach)!

If you want and have the time, would you mind giving us the receipe for your home made Prinskorv?

  • 1000 gr Pork
  • 1000 gr Fat (Späck)
  • 1000 gr Half boiled potatoes
  • 1.5 l Milk
  • 88 gr Salt
  • 1 tablespoon Allspice (Kryddpeppar)
  • 1.5 teaspoon White pepper (Vitpeppar)

Everybody here should prepare it.

I like to let my sausages rest one day in a cold fridge. Then very, very gently simmer until done.
If you boil them, or even a violent simmer, they turn into what we call ‘flick korv’. Which translates to ‘girl sausage’.

The side breaks.

We run it twice in a grinder with a disc with 3 mm holes (term?). Then i smoke them quickly (~20 min or so)

Well, I didn't get a chance for a second shot. Luckilly, there were no need for it.

The most impressive in the pic, is by far, the dog....that was the third moose, shot due to it, today

I've been busy boiling the tounge in a pressure cooker for close to an hour. It then gets skinned and places in a brine. In two-three days it will be great cold cuts. I hope.

The heart is also in a brine atm, but that will go into the smoker.

We got four moose today, and I took part in skinning and prep them for the cold room + field dressing the one I shot....in all, I very much feel my age now

Ha Ha! As much work as killing a big horse and dressing it out.
Don't hurt yourselves = go easy.
Going to be some wonderful dinners when the snow flies.

There's a bison herd on a ranch 10 minutes across the valley from me. They have several km^2 to run around in, some forest.
I can't tell you if they are "woods bison" or "plains bison". I can never remember the differences unless they are standing side-by-side.
I have eaten 6 of them, 2-yr olds, since 2001. Very tender but there's no fat (like moose) so you have to cook differently from beef, etc.

I'm in a village at 53N, up in the headwaters of the Fraser River.
Mt Robson is about 13,000' and an hour by car east of here.
Nothing over 9,000' around us. More snow up top last night. Say, above 4,000'

Do the Bison population allow hunting? Bison...like the ring of the name. Might have something to do with my childhood :)

Lots if parks and such...looks nice!
