Sorry I didn't realise the species was unknown. Uniform colouring, white rump patch, no penile sheath, white "moustache" (when head not destroyed), small stature= Roe.

Back off. I have the smoker BBQ warming up with nice, wet, apple wood for smoke.
Maybe 1/2 kg dry rub for the meat (do you mind a little espresso coffee flavour?)
Dang, you guys, let's eat. Gimme 3 hrs @ 275F, we can have a slurp and belly up to the table.

I don't want to rub your nose in it. A side of organic, 2-yr old bison, on the hook, is $3/lb.
Hang 10 days. Cut, wrapped, labelled and quick freeze for $0.50/lb. McBride sunshine on my plate.
