Beefsteak fungi best way to prepare or dry?

Finally caught the beefsteak at the right time, but whats the best way to cook?
One walker through my woods relayed a story on how her mother used to dry it first as it's very watery and cooking it with a little oil is as some have said previously a little aquired taste.

So any suggestions or advice gladly welcome.

I remember having some years ago, I found it very wet so I'd suggest drying it.

Far different recipe but you may see some adaptation:

I really like common Agaricus caps baked with a stuffing of crab, cream cheese, chives, etc.
Pop out the stems and bake the caps open side down, on a sheet pan to make them sweat.
Then stuff the partly dried/cooked caps and reheat. Don't forget the paprika!

Could you precook these, make them sweat, then the real prep?
