Although I now live on the mainland, I lived on the Isle of Wight all my life til I went to Uni 6 years ago and have been back there every summer. There are many places to camp and if you choose the correct site you can have a fire too. Compton bay farm didnt mind when we were there last year...
What epoxy are you having trouble with?
Using 2-ton (which you may have read before is my favourite for oh so many reasons) I have never had any troubles. Get some little scales from ebay and measure it by weight before mixing, it is alot easier than guessing volumes.

I am looking to make one of these ultralight packs for hiking during the summer and like the idea of storing my sleeping mat on the outside of the pack but havnt a clue where to get the lycra mesh.

I own two camelbaks, both bought for cycling, but I find them invaluable when out in the woods and hiking. Both bladders are transparent and it is easy to see how much water you have left because they sit in separate compartments to the rest of the bag and one open of a zip and the bladder is on...
If you want to use the back of a folder (like I do) why not use it closed. My opinel throws sooooooooooo many sparks it works everytime.
And being closed makes it super safe too.
My 12cm just arrived.
This is the best bit of kit I have ever bought, and cheap as chips thanks to evil-bay.
