To get a good seal I run two parallel beads of weld metal around the outside of the door opening to make a channel that the stove rope can be glued inside. Use 10mm stove rope and the door will seal down nice and tight against it.

The indian stroke is meant to deal with exactly the problem you talk about with the pry stroke stopping forward motion, especially in higher winds. Because the paddle blade is always in the water you can correct anything as you paddle rather than correcting during the next stroke...
Bod - the Indian stroke is pretty effective in an outrigger, see here for a description: http://www.gregcons.com/canoe/techniques_strokes.htm
You can use a pretty short stroke with it and should avoid hitting the aft outrigger boom.
