I have just butchered my first red stag only a young animal and kept it in the chiller for a week very tender and the sirloin was exellent a real nice texture not unlike beef no strong taste and a simple mushroom sauce as well as cheesy leeks with spuds to compliment it, cooked on my ronnie sunshine griddle with salt and pepper, no pics but will do some on my next one.
going back up north for a week in the forest with the rifle and hammock so hopefully should have a few more for the chiller,this time will do a full thread with pictures and minimal kit, atb wayne
