I found it could be edible:

Is all the plant only edible to colour other meals? How do you use the root?

As you see I find some information but it is not too much broad and even if I know how to identify the plant I think I could not eat it, or colour anything. And that is a generic problem, I have spent some time learning about plants but once I find them the next step, the most important, is not easy. I need very reliable sources on cooking edible plants, Do you know a good link-book-youtube channel... where I could learn how to prepare this plant?

As I said this is just an example, if I find more edible plants I would like to know a bible, a reliable place where one could learn how to use those plants.
