Quick Cornflake Bars
ideal for bimbles, lunch-boxes, christmas nibbles and keeping small children quiet on a rainy afternoon

2 cups of cornflakes
2 Tbsp of peanut butter
2 Tsp of honey

Blitz the cornflakes with a food processor or hand crush them in a zip-lock bag.
The latter technique will keep a small child occupied for twenty to thirty minutes

Warm the peanut butter & honey till runny and stir well together.
Add the sweet gooey mixture to the cornflake bits and mix in till absorbed.
Hand sticky spoon and mug to kid, they instinctively know what to do next and it makes washing up easier

Smooth the mix onto a tray or press into moulds
then leave in the freezer or fridge for an hour and stand guard by the door.

All amounts are subject to variation with set honey and proper homemade peanut butter probably best. Plus the finer the cornflake powder the more solid the result. So knock up a small batch first with whatever you have then tweek for effect. Light & crumbly or survival ration solid the choice is yours.

Add chopped dried fruit or melt chocolate chips in the peanut butter mix for extra flavour. If you need something really solid that will survive a week in a rucksack then melt a jelly (no water added) and drizzle over the mix on the tray and let that soak in. You can mix it in before with the peanut butter & honey but it is like working with quick setting epoxy.
